Our FOODY Philosophy
While the cafe may be the centre of our hub projects, first of all we need to make the cafe a place to visit for what it offers. A place where people come for its food and its appeal. In this short chapter we want to outline how the cafe will operate and what our basic food and entertainment is. Obviously simple tasty foods is primary. The best way to achieve this is to always keep the menu small but varied over the year.
We need to make sure that the Re-Wilding Cafe itself is something special. A place where people want to come and visit. That does not mean that the structure and food is expensive or over the top. In fact we have visited many really cool cafes where where they offer simple but appealing foods. What will really make our cafe appealing is the people that work with us and who create the atmosphere. As as that all the foods are based around Scandinavian cuisine.

As the quote above puts it, we need local passionate people. Passionate people that are customer facing need to offer great service. Having passionate people, they must be able to explain, where our foods come from, how it produced and how to cook it. As well offering great service they have to be knowledge enough to explain that pushing our green, sustainable agenda, and create an eco conscious understanding in our customers but it must never be pushy, quietly done, in why this is important. That is why our staff have to be committed to what we are doing.

Sourcing Ethically & Ecologically Produced Foods from Local Suppliers
Sustainability: We are working towards what we hope will be a long and lively future. To achieve this, we need to develop a sustainable attitude that includes the idea of Environmentally positive farming: this helps to protect the landscape, reduce pollution and combat biodiversity loss, and support the organic movement and Support Regenerative Farming as a way of allowing nature to do its work, one we support and are actively involved in.
Local and seasonal foods: Buying from local producers tends to ensure fresher food, which has a smaller carbon price tag, it also supports better investment in the local economy and protects our food heritage. By getting everyone on board also helps support the key message of the business.
Quality: The pursuit of quality in everything we do is key. By using fresh local ingredients, food products from local artisan food producers right down to how the service works to how the cafe and van looks and operates should always be about quality.
Integrity: Relationships are built on integrity and respect. Building relationships is also vital, from our customers, suppliers and with our local community. We have to supply what we offer. People have to believe in what we produce and not change these vital ideals.
Environmentalism: Everything we do has to be about how we affect the planet. From the disposable cups and plates – ours by the way are made from potato starch, which is used to create our own compost garden which will ultimately feed the plants we grow. We also act in this way to promote better environmentalism through being aware of what we use (over-consumption) to what we use through re-making and re-purposing and how we grow our foods.
Not Bound by Convention: Success comes from having fun and doing things differently, so that we are not constantly hindered or bound by convention.What makes life interesting should always be a fun learning experiences. As soon as we get set in our ways is the time to pass it on to someone else.

Attention to detail: Constantly checking and practising the detail in everything we are involved in. Developing a strong attention to details is vital because we are always looking at the little things that make the difference between an average place and a great place to visit. By working this way we are also challenging ourselves everyday to be better. We must never settle for second best.
